Oberholtzer's Kentucky Sorghum

Sweet sorghum is made from juice extracted from a tall annual grass, which is native to Africa and known for its drought tolerance. The liquid is filtered of impurities and concentrated by evaporation in open pans. The result is a clear, amber-colored, mild-flavored syrup. Sweet sorghum has been used for more than 150 years, mainly in the South and Midwest, to sweeten drinks and flavor meats, but its most popular usage was in baking. It was used in place of sugar to make pies, breads, puddings, cakes and cookies.
