Spoon Bread Mix
Spoonbread is a sweet, moist cornmeal-based dish prevalent in parts of the Southern United States.
Although named a "bread", spoonbread is closer in consistency and taste to many savory puddings, such as Yorkshire pudding. It could also be said that due to the technique of making spoon bread that it is a cornmeal soufflé.
Some recipes call for the inclusion of corn niblits, others do not. In the South, Kentucky in particular, there is much interest in the "best" recipe, much like chili cook-offs in the southwest US. Some cooks identify this dish as cultural, part of the culture of the South, and are interested in making certain that certain formalities are observed to preserve the cultural/culinary practices such as using a spoon to serve the spoonbread instead of slicing it with a knife and lifting to one's plate from the baking dish with a fork or spatula.
